Warai-man

This confection made by “Budonoki Co., Ltd.” of Kanazawa City, Ishikawa Prefecture, is said to be a manju made from the cut-off ends of the company’s hit product “Warabimochi Baum Black Beans” which would normally have been discarded.
The idea is to reduce food loss and bring smiles to everyone’s faces.
When halved and looking closely at the cross section, there is a strange transparency to the manju dough. This seems to be a texture created by the use of strawbaked rice cake ingredients, and the texture is chewy and jiggly together.
Inside there is a light Koshi-an (sweet bean paste) filling that goes well with the slightly chewy texture of the dough. The fresh and slightly cool feeling on the palate is a characteristic of warabi mochi powder. The refreshing flavor of orange puree kneaded into the dough is subtly fragrant and goes well with the chewy and fresh texture. It is a delicious manju with a refreshing sweetness that makes it possible to eat as many as you like.
