Ougon-Okome no Castella

The “Ougon-Okome no Castella (Golden Rice Castella)” made by Patisserie Ange in Hanamaki City, Iwate Prefecture, is a Castella made from rice flour.
The “golden rice” is the name of the rice flour used for the castella, which is made from “Kinsatsu-mai” a brand of rice produced in Esashi, Iwate Prefecture. It seems that they call it “golden rice” because it is made from Kinsatsu-mai.
It is moist but chewy! Esashi City in Iwate Prefecture is famous for its rice. It is nice to enjoy brand-name rice in the form of sweets like this.
It has a strong Castella flavor, but to my surprise, it is flourless. It can be made this way. The chewy elasticity created by the rice flour gives this sponge cake a unique and delicious texture. Castella made with rice unique to the region makes a great souvenir.
