Kameya Honten in Shizuoka Prefecture makes “Kame Manju” a manju shaped like a tortoise, which is a symbol of good fortune.
The turtle’s features are captured so well that one wonders how it is baked. The surface seems to be coated with egg yolk so that the texture of the carapace is well defined, giving it a three-dimensional effect.
Inside is koshi-an (sweet red bean paste). The contrast between the manju dough and the red bean paste is crisp and beautiful.
I find it amazing that the manju dough is baked in a uniform thickness.
The dough is like a hard baked bread, but the manju skin is delicious as it loosens and falls apart. The sweet bean paste is also light and easy to eat.
