I bought “Walnut Yubeshi” from Gansendo in Miyagi Prefecture.
”Yubeshi” is a traditional Japanese confectionery found throughout Japan, but what exactly is it?
Yubeshi is a traditional Japanese confectionery made of glutinous rice flour, starch syrup, sugar, etc. It is a traditional Japanese confectionery, but its appearance and taste vary considerably from region to region. The kanji character for “柚餅子” (yuzu cake) may remind you of yuzu (citron), but yuzu is not necessarily used in yubeshi. In western Japan, yuzu is commonly used to make yubeshi, while in the northern Kanto and Tohoku regions, yubeshi made with walnuts is more common.
This time introduced here is a yubeshi made with walnuts, a traditional delicacy from the Tohoku region.
The chewy material made of glutinous rice flour and syrup contains plenty of walnuts. I grew up in an area familiar to me here, so this was the style of yubeshi I was familiar with.
The simple sweetness of the walnuts has a savory and crunchy taste that is nostalgic and delicious. It is a taste that explains why walnut yubeshi has been loved for a long time.
