Kagawa Strawberry Dacquoise

I bought “Ichigo(strawberry) Duckworths” made by Marushin Co. in Kagawa Prefecture. “Duckworths” are a traditional French baked cake.

The strawberry duckworth is made by sandwiching a rich cream of Setouchi fruit between the dacquoise and the strawberry.

It has a very delicate mouthfeel, even through its many layers of pie-like, biscuit-like dough.

I had never had it before, but the strawberry cream, as well as the slight almond flavor, and the layer of sugar coating around it worked well. It was a very complete pastry that went very well with the fruit jam.
