Vyon, whose main store locates in Sakurashinmachi, Setagaya-ku, Tokyo, is a confectionery shop established in 1965 and is famous for their baumkuchen. The Authentic baumkuchen is baked carefully one by one and “Villonette” shaped like a jar is also famous.
It is nice to be able to buy such a particular authentic baumkuchen by a single slice.
Looking at the cross section, each layer of dough looks very thin compared to general baumkuchen.
The dough is carefully hand-baked one by one by their confectioner following the basics of the authentic German baking method. The dough has high density and moist texture and this is becasuse any expanders are not used.
The crispy texture yet strangely fresh texture of the dough and tastes the rich flavor of the eggs. It reminds us this is a traditional baumkuchen. It is an authentic taste.
