Atago no Tsuki

“Atago no Tsuki” ,a dorayaki, is a bean-jam pancake, made by Kan’eido, a Japanese confectionery in Kyoto who has numbers of stores all over the country. Kan’eido is a very long-established wagashi shop. They were established early Edo period (1630 – 1863).
The confectionary name “Atago” seems to be named after Mt. Atago in the northwestern part of Kyoto City. Perhaps it is an allusion to the full moon. My expectations are high for dorayaki made by a long-established Japanese confectioner in Kyoto.
It has a standard shape, and it has a light texture and is generally fluffy. The surface of the well-baked dorayaki crust is smooth.
Seeing inside, it contains fresh red bean paste.
The refined sweetness and fluffy dorayaki crust give it a well-balanced taste. It is like a model dorayaki that has all the basics down. It is an authentic dorayaki made by a long-established shop in Kyoto.
