Kurumi mochi
Japanese notation "くるみ餅(雅風堂)"
“Kurumi mochi”, walnut rice cake is made by Gafudoh who was established in 1949 (Showa Era 24) and has made tradiitional Japanese confectionery in Hakusan city, Ishikawa Prefecture. Kurumi mochi is covered with Gyuhi, Turkish delight and it includes lots of walnuts.
Kanazawa City has a deep history and tradition of making Japanese confectionery, and is often ranked as one of Japan three top confectioneries, along with Kyoto and Matsue.
It is square and looks like a “Yubeshi“, but the gyuhi mochi is very soft and the corners are rounded.
When you cut it in half, you see a lot of large walnuts inside.
The chewy savoury walnuts is accentuated among the light sweet Gyuhi mochi. It is an elegant finish with touching Kanazawa’s originality.
