Mizuyokan (Amatoya)

Mizuyokan with a strong flavor of brown sugar and honey

“Mizuyokan” supports Fukui Prefecture’s traditional culture of “eating Mizuyokan in a kotatsu (Japanese foot warmer) in winter. Amatoya’s “mizuyokan” in Fukui City, Fukui Prefecture, is a part of this culture.

There are many confectioners in Fukui Prefecture who makes mizuyokan, and among them, “Egawa no mizuyokan” made by Egawa is very famous, and this one made by Amatoya is also a well-reputed product.

Mizuyokan, soft adzuki -bean jelly is poured into a flat box. Nowadays, all manufacturers wrap the top of the box with transparent plastic sheet, but there was no such packaging technology in the past and the contents could spill out if the box was tilted.

Mizuyokan laid out in the box. Somehow, this Fukui  specialty Mizuyokan reminds me of a swimming pool.

Transparent adszuki-bean brown color, very beautiful. The texture seems slightly firmer than the “”Egawa no mizuyokan” I have had before.

It is light and sweet, but gives a strong flavor of brown sugar and honey. It is no exaggeration to say that mizuyokan is Fukui’s soul food, which has different type of character of the products made by variety of stores. I will continue to compare mizuyokan from various stores in the future.
