Saku-Saku fried Senbei

Lighter texture & richer than you'd expect.

“Saku-Saku fried Senbei” made by Ishibashi Senbei in Ninohe City, Iwate Prefecture, is deep-fried Nanbu Senbei crackers. Nanbu Senbei is a famous rice cracker but it is not made from rice but flour basically.

Ishibashi Senbei has been making Nanbu Senbei over 50 years in Ninohe City. They also make many traditional Nanbu senbei.

It has a very light texture. It is fried and the outer of the senbei is thin and  a bit transpararent because of soaked oil.

Nanbu senbei has basically low moisture content,  and the frying process seems to remove even more moisture, resulting in a truly crispy and light texture.

It is a bit unexpected that such simple flour cracker could taste so good just by frying it. Nanbu Senbei lovers should try it at least once.
