Rokkatei’s Potato Pie

“Kakkō-no-Sato” is a cookie with a caramel cream sandwich that has been sold by Rokkatei since 1954.
“Kakkō” refers to that bird, the cuckoo.
The thinly baked cookies are designed in the shape of an oak leaf.
Even when the two pieces are stacked on top of each other, they are about 5 mm to 6 mm thick, and the caramel cream is stretched thin and sandwiched between them.
The crispy, crunchy dough is light but goes well with the rich caramel cream. The caramel cream has such an authentic flavor that you can almost taste the bitterness. It is a thin cookie, but the taste was satisfying.
