Wari-Gohri

Wagashi Murakami, established in 1911 in Kanazawa City, Ishikawa Prefecture, makes “Wari-Gohri”, a confectionery designed like broken ice.
It is made with extremely simple ingredients: agar, sugar and water, and the production process follows an traditional methods. The products is made with their precise dedication. The package design is also stylish.
The randomly broken pieces of this confectionary are aptly named as “Wari-Gohri”. The colorful shades of the ice cubes are mixed in, giving them a gorgeous appearance, like gemstones.
The sugar on the surface is hardened and I thought it was candy.
The inside of the agar is soft and jelly-like. It is said that the traditional process of drying agar for 6 days produces those grains. They are crispy on the surface but still have a jelly-like texture inside, like gummy candy. It is a simple yet beautifully elegant confectionery.
