“Fuku-koban” made by “Kado Fukuiku” in Higashi-Ōmi City, Shiga Prefecture, is a thin-skinned manju with a fluffy cooked azuki bean paste wrapped in a thin skin.
The manju is shaped like a koban, in honor of the “Senryo koban” of the Omi merchants. The name “Fuku-koban” also has a sense of good fortune, as if to bring prosperity to the business.
The thin dough made from Omi rice and yams is filled with sweet red bean paste cooked with Hokkaido Dainagon azuki beans.
This manju has a light yet impressive sweetness with the flavor of azuki beans. The very elegant finish shows the craftsman’s attention to detail.
