Gluten-free Madeleines

“Gluten-free Madeleines” made by “NEVERS Co., Ltd.” in Ibi-gun, Gifu Prefecture, are madeleines made without wheat flour, as the product name suggests.
“NEVERS” has been producing madeleines, baumkuchen, and other western-style confections made mainly from rice flour for more than 10 years, and sells a variety of gluten-free sweets under the “Smile for Your Body” series.
These madeleines also look like standard madeleines on the outside. They are made gluten-free, but you can’t tell from the outside.
The texture of the dough is a little different from that made with wheat flour, but it is fluffy and moist, like a high-quality cake dough.
Perhaps because they are made with rice flour, they have a delicious, slightly firmer texture. I was impressed by the technique that has been cultivated over many years.
