Nama-Shigure
Japanese notation "生志ぐれ"
Founded in 1875 in Ōzu City, Ehime Prefecture, “Tominaga Shoeido’s” signature confectionery “Shigure” has a very long history, having originated as a handmade confectionery in the clan’s mansion about 200 years ago. Since then, it has been a well-known specialty of Ōzu.
The name “Shigure” is said to be derived from azuki beans, which resemble drizzling rain in late autumn and early winter.
When opened, a stick-like rice cake-like texture wrapped in plastic appeared. The freshness of the product can be felt through the plastic.
“Shigure” is made by mixing azuki beans with rice flour and rice cake flour, and steaming it in a rice cooker, The texture is different from that of “Yōkan” or “Uirō”
The cross section is transparent like this. It looks like ogura is mixed throughout the mochi.
It is refreshingly sweet, has a sticky texture, and is extremely pleasant to the palate. It is amazing to know that such a delicious snack has been made for 200 years.
