Shōgoin-Yatsuhashi
Japanese notation "聖護院八ツ橋"
The long-established “Shogoin Yatsuhashi Sohonten” in Kyoto City, Kyoto Prefecture, is known as the birthplace of “Yatsuhashi”. The Shogoin Yatsuhashi was created more than 300 years ago in 1689, the same year as the establishment of Shogoin Yatsuhashi Sohonten.
It is said that Yatsuhashi, one of Kyoto’s representative Japanese sweets, was named “Yatsuhashi” because of its resemblance to the shape of a koto, in memory of Yatsuhashi Kengyō, the founder of koto music.(*There are various theories)
The crispy texture and the aroma of Nikki (Cinnamon). It is a very simple pastry, made with only rice flour, sugar and water.
“Yatsuhashi” is a confectionery so famous that no Japanese person is unaware of it, and “Shogoin Yatsuhashi,” which is said to be the original, had a standard, never-ending flavor.Incidentally, there is a theory that the original “Yatsuhashi” is the original “Honke Nishio Yatsuhashi“, but both are delicious with a deep flavor that has kept the tradition alive.
