Kame-sen
Japanese notation "亀せん"
“Kame-Sen” made by Ajiya Seika in Kumamoto City was created five years after the company was founded in 1963, and has continued to be a historical rice cracker to the present day. The bag has a tortoise mark on it, which can be seen as the Chinese character for “turtle”.
The rice crackers seen through the bag are so-called “deep-fried rice crackers”.
This “Kame-sen” made by Ajiya Seika is said to be the major deep-fried rice cracker in Kyushu.
It is shaped like a turtle’s shell. This is probably the origin of the name “Kame-sen” and the ruggedness of the shape beautifully expresses the turtle’s shell shape.
The fineness of the rice cracker dough is characteristic of this product.
It is a classic delicacy with a sweet and spicy sauce intertwined with it. This dough is aged at a high temperature of over 100 degrees Celsius for more than 10 hours while being dried.
