Kajitani’s Cigar Fries

”Kajitani’s Cigar Fries (finger biscuits)” made by Kajitani Foods in Okayama City, Okayama Prefecture, is Kajitani Foods’ signature product, and has been a long-seller for over 65 years since its launch.
The retro design logo is nice. It gives the impression of a candy born in the Showa period. Incidentally, the name “Cigar Fries” is derived from their shape, which resembles a “Cigar” although the size is completely different.
Also, although they are called “fried” they are not deep-fried, according to the company. Instead, they are made by pouring hot oil over oven-baked dough, a method developed to create a crispy texture.
Indeed, if you look at the bottom side, you can see signs of having been baked on an oven plate. You can also see large grains of salt on it in some places.
They are beautifully colored and baked to a golden brown. Each piece has a lighter texture than expected and the surface is shiny.
The dough’s floury aroma, rustic sweetness, and moderate sprinkling of salt are exquisite. Despite its light and crispy texture, the surface of the dough is appropriately coated with oil, which seems to add depth to the flavor of the dough. It is no wonder that this has become a long-seller.
