Miyamamori
Japanese notation "深山守"
Founded in 1958 in Otsu City, Shiga Prefecture, the wagashi shop Kanou Shoujuan’s “Miyamamori” is a highly original confection made with azuki red bean paste encased in agar and an abundance of sticky rice.
This package of “Miyamamori” is also designed in the same way as “Kuri-sanga” with an ingenious way to open the package.
The appearance of the pastry looks like nothing you have ever seen before, white material scattered in agar.
The white rice is made from glutinous rice that has been ground to the point of retaining its texture, and it seems to represent a village where snow is falling deeply.
When I split it in half, I found soft Ogura-an (sweet bean paste).
The flavor of glutinous rice and the simple sweetness of Ogura-an are delicious. It is a deeply flavored sweet that goes perfectly with a cup of strong green tea.
