Momotose
Japanese notation "百歳(ももとせ)"
Rokkatei’s “Momotose” is a pastry with sponge cake inside a pie crust. It is sandwiched with black currant jam, but I wondered what “black currant jam” was.
It is the fruit of the blackcurrant plant, which is called “blackcurrant” in English and “kurosugiri” in Japan.
In France, it is called “Cassis,” and it is also a familiar fruit in cocktails such as “Cassis soda” and “Cassis orange”.
The cake is wrapped in a boat-shaped pie crust, baked in a very beautiful shape, so well formed that one wonders how it is even baked. I didn’t know pie crust could be baked in such a well-shaped shape.
The dough is richly kneaded with almond powder, and the outer pie crust and the cake inside look very beautiful and deliciously browned.
When I cut it in half, the “black currant jam” appeared. The name “Cassis” is more familiar to me, but this shade between purple and black is that delicious sweet and sour one.
The perfect balance of pie, sponge cake, and black currant jam, the sweet and sour jam balances the gentle sweetness of the sponge cake, giving the cake a luxurious taste.
