Matsukaze
Japanese notation "正観寺 松風"
”Matsukaze” is a traditional confectionery made by “Maruho”, a very long-established company founded in Kumamoto Prefecture in 1897, and has received various awards in the past.
What I took out of the classically designed box was a vacuum-packed pastry.
I opened the plastic wrapper to reveal a package wrapped in Japanese paper. This confectionery, which I had never tasted before, was truly a surprise.
Unwrapping the Japanese paper, The appearance of the bisket is out of the scope of my expectation. It is a thin plate.
It contains many small wooden board-like shapes. I lined them up and they look like very thin rice crackers.
It looks like a very thin rice cracker. When you try it, it has a crispy texture and a good flavor of egg and flour.
On the reverse side, there are beautiful burn marks. I wonder how in the world they are made.
Shaped as neatly trimmed strips. Very thin and evenly baked. It is a masterpiece of great skill and technique. The taste was simple, elegant, and sweet.
