Kin-Con-Kan
Japanese notation "きんこんかん"
I bought a “Kin-Con-Kan” from Kaygetsu-do, a long-established confectionery shop in Matsue, Shimane Prefecture. Kaygetsu-do is famous for “Izumo famous sweets “Usu Ogura” but they also produce many new confections as well as traditional ones. The “Kin-Con-Kan” is a crispy Western-style cracker with cream sandwiched in between.
Cream is sandwiched between wavy cookie-like dough.
Regularly wavy crackers. Although it is called senbei, it has the texture of a cookie.
The Western-style cracker itself is like a crispy cookie, but the overall texture of the snack is moist.
Both the waffle cookie dough and the cream inside have an elegant, light sweetness that goes well with tea, of course, but it also goes perfectly with tea or coffee.
