I bought a “Dorayaki Senbei” from Suzuki-ya in Okayama City, which is touted as “Dorayaki made by a rice cracker shop”. Suzuki-ya is a long-established confectionery shop established in 1923, and its main products are rice crackers made from wheat.
The arabesque pattern is in the dough. It looks like a thin dorayaki, but the texture of the dough looks delicious. Although it is called “Sembei” (rice cracker), it has the texture of sponge cake dough.
The dough of the dorayaki is indeed finished like a sembei (rice cracker), but it is a little more like a hard sponge cake dough, with a moist, cookie-like sensation.
The red bean paste inside is also a bit slim to match the volume of the dough. The moist and rich Ogura-an (sweet bean paste) is very tasty.
It has a moderate sponge cake-like texture, a bit like dorayaki dough pressed and baked.
