It seems to be kneaded with bamboo ash to make it black, but I had no idea Incidentally, the manjyu is made with a lot of Yoshino kuzu (a type of arrowroot starch) as the dough material to make it moist and smooth. The luster of the manju skin may be due to this material.
The inside is also jet black. The red bean paste is blackened with bamboo charcoal, and sesame is used to give it a savory flavor. Also, the manju itself has elasticity and a chewy feel. In this sense, the texture is reminiscent of rejuvenation.
