Soyakate

Interesting named Dorayaki whose dogh has a sense of originality

“Soyakate” made by Gion Ninigi locates in Gion-cho, Higashiyama-ku, Kyoto City is a bean jam pancake.  The confectioner’s name “Ninigi” may probably derive from “Niniginomikoto” of Japanese mythology and it sounds unique name.

This name of the confectionary, “Soyakate” is also very unique.  It means “but” or “even so” in Kansai dialect, correct?

The dough is light brown color and has a pancake-like texture.

The dough kneaded with brown sugar is fluffy and springy.

The light and elegant sweet red bean paste goes well with the brown sugar flavored springy dough.  The balance of both the sweet bean paste and the dough is exquisite and this dorayaki is finished perfectly.
