Usukawa-dora

Thin crust and Gyuhi, rice cake make an excellent combination, and the dorayaki is delicate and delicious.

“Usukawa-dora” is a bean-jam pancake made by Koroan,whose main store locates in Motomachi, Naka-ku, Yokohama. Koroan is also famous for its “brown sugar bean-jam pancake”, called dorayaki,” but this “Usukawa-dora” has a much different concept from the dorayaki.

It is about 7 cm in diameter, the size is smaller than general dorayaki. Usukawa means thin crust, and this crust is about 2~3mm thick and has a pancake-like texture.

The dorayaki crust has a traditional Japanese pattern called “seigaiha” meaing blue ocean waves. It is a very elaborate and beautiful design.

Gyuji mochi, rice cake made from glutinous rice, and coarse red bean paste are filled between the crust.

It tastes like a very elegant Japanese confectionery.  It is well balanced of the thin crust, gyuhi mochi and red bean paste and seems to be carefully calculated to keep such texture. It might be expected of a great confectioner.
