Tokyo Kinaco

Surprisingly soybean flour goes well with baked sweets.

Akasaka Aono whose main store locates in Akasaka, Minato-ku, Tokyo is a ong-established Japanese confectionery established in 1899 (Meiji era 32 YR).  “Tokyo Kinako” is one of their baked sweet using roasted soybean flour.

Naming “Tokyo Kinaco” sounds like stylish.  The package is also modern design.

It looks like a financier, backed pastry.

Not like general financiers flavor with moistened dough with butter, this is made with soybean flour and wheat flour and the texture is crispy and fluffy.  It is like a sponge cake with the scent of soybean flour.

Surprisingly soybean flour goes so well with baked sweets.  Seeing such exquisite combination, this must have been studied in depth by the confectioner, concentrated their big effort.  This financier raises more possibility of soybean flour as an ingredient.
