Ganso Ika-senbei

A rice cracker featuring squid shape made of dough included broth of dried squid

“Ganso Ika-senbei” made by Sugata Limited Company, founded in 1881 in Miyako City, Iwate Prefecture, is a rice cracker featured shape of a squid. The main material is Sanriku Surume ika, Japanese common squid.

The story of the birth of the “Ganso ika senbei”, meaning Original Squid rice cracker,  goes back to the Battle of Miyako Bay in 1869, when the government force was deployed in Miyako.  The founder, Kichitaro Sugata, came up with the idea of selling a rare snack using marine products, to the soldiers.

It is hard rice cracker shaped like a squid .  It is made by kneading flour and sugar mixed with broth of Surume, dried squid, into a hard dough and baking it. So the entire dough tastes extracted squid flavor.

The texture is very fine-textured and crisp and firm.

The surume flavor kneaded into the dough exudes a well-balanced flavor throughout. The light sweetness also goes well with the squid flavor, The rice cracker is hard and crunchy.   I could not stop taking the next bite.
