Soba-raku

"Soba manju" made in the Izumo soba production area

“Soba-raku” made by San-eido in Matsue City, Shimane Prefecture, is a manju made with buckwheat flour dough wrapped in a sweet bean paste.

Izumo is a well-known soba production area and is one of the three major soba production areas in Japan. Izumo soba is famous for its “Wariko soba” which is made from buckwheat flour with a strong flavor and served in a round bowl.

Incidentally, the three most famous buckwheat noodles in Japan are Wanko Soba from Iwate Prefecture, Izumo Soba from Shimane Prefecture, and Togakushi Soba from Nagano Prefecture.

This manju skin is made from buckwheat flour, the raw material used to make Izumo soba.

The sweet and refreshing Ogura-an (sweet bean paste) goes well with the manju skin, which has a strong aroma of buckwheat. Made with buckwheat flour from Izumo, the manju was a very high perfection.
