Nobori-ayu
Japanese notation "登り鮎"
“Tamaiya Honpo” a long-established Japanese confectionery established in 1908 in Gifu City, Gifu Prefecture, is famous for making “Nobori-ayu” the original sweetfish confectionery.
It won the grand prize at the National Confectionary Exposition in 1954, and is now a very famous confectionary in Gifu. The package design is also delicate and beautiful.
This so-called “sweetfish confectionary” is made in the shape of a sweetfish and wrapped in gyuhi (a sweet bean paste), but it has the dignity of the original. Nowadays, it has become a standard Japanese confectionery found everywhere, but at the time, it must have been a unique concept.
The firm, thick dough is filled with soft Gyuhi (rice cake).
The sponge cake dough is firm and has just the right amount of chewiness. The gyuhi inside has a simple sweetness that will never get old. It is a perfect Gifu souvenir.
