Kazutoyo-no-Tsuma

“Kazutoyo-no-Tsuma(Kazutoyo’s wife)” made by “Nishikawa-ya Rouho” a long-established confectionery shop in Kochi Prefecture that is also famous for making “Kempi” is a so-called “Milk manju” but the name of the product is very unique.
First of all, who is “Kazutoyo’s wife”? The question comes to mind: she was the wife of Kazutoyo Yamauchi, a military commander of the Tosa Domain from the Warring States Period to the early Edo Period. She was called “Chiyo” or “Matsu,” and is often regarded as a model of a “good wife and wise mother” based on various historical anecdotes.
These milk buns are made in the motif of a person famous in history as such a good wife.
The inside of the manju is filled with the aroma of citrus fruits. The “Tosa Konatsu” used is a bright yellow-skinned fruit about one size larger than an Onshu mandarin orange, and has a unique sweet and sour taste.
The aroma of “Tosa Konatsu” spreads in the white bean paste with reduced sweetness. The sweetness and bitterness of the sweet and sour taste, as well as the slight bitterness, add depth to the overall sweetness of the manju, giving it an originality.
