Kinkan-Daifuku
Japanese notation "きんかん大福"
Kinkan Daifuku” is a confection made by Shirohei Rohpo, which was founded in Shiga Prefecture in 1865 and has continued to make traditional Japanese confections.
The Daifuku is small, about 3 cm in diameter, and is said to contain a whole kumquat.
The Daifuku rice cake is made from the finest locally produced Habutae glutinous rice, and is extremely soft to the touch.
Split in half, the kumquat has a beautiful bright yellow color. It is really a whole kumquat.
In addition, the haniue mochi that wraps the kumquat is very delicately made, with just one thin layer of kumquat and red bean paste.
Wonderfully delicious. The deep sweet and sour taste is exquisite. I admire the tremendous potential of the natural world that a naturally occurring kumquat just boiled in nectar can go so well with Daifuku.
