Hatchō Sweet Potato
Japanese notation "八丁すいーとぽてと"
“Hatchō Sweet Potato” made by “Bizenya”, a very long-established company with a history of 230 years in Okazaki City, Aichi Prefecture, is a sweet potato confection made with “Hatchō Miso”.
It seems to be an ambitious work that puts miso in the sweet potato filling, but the miso used is the Hatcho miso made by “Kakukyū” which has been making miso since the Edo period, also in Okazaki City, Aichi Prefecture. It is a kind of collaboration work between two very long-established companies in Aichi Prefecture.
When opened, it is a sweet potato in a cup, the reddish purple dots look like sweet potato skins.
I cut it in half and out it came. It is a brown miso bean paste.
The tangy taste peculiar to Hatcho miso is also slightly perceptible, giving it a unique flavor with depth. This is the first sweet potato flavor that makes you wonder if such an approach is possible.
