I bought a financier made from “Takase-cha”, a “fantastic tea” in Kagawa Prefecture.
I had never heard of Takase-cha before, but there seems to be a reason why it is called “phantom tea.” Production is only about 0.2% of the nation’s total tea shipment, and it is known as a very rare and valuable tea leaf.
It is a vivid matcha color all the way through. You can see that a lot of Takase tea is used in the moist texture of the cake batter, which is unique to financier.
It has an elegant sweetness and a mild bitterness, and is finished with the flavor of Takase-cha. It tastes great with coffee.
