Hinai-Jidori Egg Dorayaki

“Hinai-Jidori Egg Dorayaki” made by E&TAMAGO, a food production and planning company in Odate City, Akita Prefecture, is a bean-jam pancake used eggs of Hinai Chicken, a brand of the local chicken that the region is proud of.
Hinai-dori is one of Japan’s three major chicken breeds, along with Satsuma Jidori and Nagoya Cochin, and it has a long history in northern Akita Prefecture. It is also used for their traditional cuisine there.
It looks quite standard dorayaki. Unlike egg-laying hens, which lay eggs almost every day, Hinai Jidori hens lay only one egg every two or three days so that the eggs are highly valuable. The eggs have a rich flavor and the yolk is darker color than most of other eggs.
Perhaps because of the egg-based dough, the texture of the crust is crispy pancake.
