Gosan-yaki Castella precisely made with the finest ingredients

Suzakiya is a very long-established sponge cake shop who was founded in 1867 (Keioh 3) in Minamishimabara City, Nagasaki Prefecture. Their “Gosan-yaki Castella” is a sponge cake made from the selected finest ingredients.

Naming “Gosan-yaki” represents the ratio 5:3 of egg yolk and egg while.  Egg yolk is used more than the general amount.  Thus the sponge cake is more rich and deep flavor.  Such ratio balance requires high skill.

Compared to ordinary Castella, the sponge color is deeper yellow due to the higher portion of egg yolks.

The dough looks very delicacy and densed.  The used ingredients are carefully selected, such as Awa Wasanbon sugar and Taiyo Egg, one of egg brand produced in local.

It is rich and refreshingly sweet, with a mellow egg flavor. It tastes of the high quality of authentic Nagasaki sponge cake carefully made by artisans.
