Nure Dorayaki

Dorayaki crust so thin and moist as if they were integrated into one with the pasted red beans

“Nure Dorayaki” is a bean-jam pancake, made by Baigetsu-do in Hioki City, Kagoshima Prefecture.  That is carefully baked by hand, piece by piece.

The letter on the package is printed in gold, with its luxurious but unique font. It gives funny impression.

The moist texture is like a sponge cake. The shape is the same as “Ramudra”, their another popular product.

Naming “Nure Dorayaki”, meaning wet dorayaki sounds so moist on the crust, but it has the texture of a fluffy pancake. It is finished with a very thin and light texture. Making such thin dorayaki crust is said that it is particularly difficult to bake and requires very high skill among their artisans.

It is very rich and amazing with the volume of the pasted red beans. I guess the reason why it is named “wet dorayaki” because between the pasted red beans jam and the delicate crust skin is moist as if it were wet.
