Delicate texture, baked sweet bun pouring traditional Japanese confectionery techniques

Sōke Minamoto Kitchōan, the name hase been frequently seen in department store basements nationwide, is actually a Japanese confectionery shop originated in Okayama Prefecture. Founded in 1946, they  headquartered in Ginza, Tokyo, while operating approximately 150 stores across Japan, producing a wide range of traditional, high-quality Japanese sweets.

“Oribe-Nishiki” is their flagship confectionary. This is a baked sweet manju, a bun wrapping sweet red bean paste and sweet potato paste and furthermore chestnuts are sorrounded with those pastes.

The thinly baked pastry encases a moist filling, including chopped chestnuts nestled in the center.

The finely textured sweet bean paste has a refreshing sweetness that perfectly matches with the chestnut flavor. The chopped chestnuts create a delicate texture and admire the excellent balance of the texture.  This embodies traditional Japanese confectionery techniques.
