Hiroshima Ginjo-ka SASA

Japanese notation "ひろしま吟醸菓 酒々"
Gokasho Takagi in Hiroshima City is a long-established Japanese confectionery established in 1919 (Taisho 8). Their “Aki no Koromo” is also famous, and “Hiroshima Ginjo-ka Sasa” (Hiroshima Ginjo-ka Sake) is their another confectionary.
Hiroshima Prefecture is also famous for sake production, and this “Hiroshima Ginjo-ka SASA” is a baumkuchen made with sake lees taken from Kure’s famous sake “Ugo no Tsuki” to give it a rich aroma.
“Ugo no Tsuki” is a brand of sake which has a fruity aroma and tastes like white wine. It is a surprise to know using the sake for this baumkuchen. It gives an aroma while open the package and it reminds us of brandy cake, impressing with its well fitting with the confectionary.
Sakekasu, Sake lees is also kneaded into the red bean paste sandwiched between the baumkuchen dough, giving it a mellow aroma.
It does not much taste like sake as we expected but rather a fruity aroma passing through our noses. There are various types of sake, but this “Ugo-no-tsuki” sake lees may be especially suitable for Western sweets. It tastes like a high-class brandy cake with a strong Japanese taste.
