Ena Kawakamiya, famous for its chestnut kinton in Ena City, Gifu Prefecture, offers another popular product, the chestnut sable “Yama-no-Shiori”.
The product name “Yama-no-shiori” (Mountain bookmark) was inspired by a story of a bookmark traveling through the woods, where a person reading a book under the shade of a tree inserts a leaf into the book instead of a bookmark, and the leaf is carried to another place.
The shape of the leaves is cute. It is firm and thick, and the size seems to be satisfying when you eat it.
Ena Kawakamiya owns a farm on Tanegashima Island, where high quality sugar cane is harvested, and they also produce brown sugar.
The rich buttery flavor, the bitterness of the chestnuts, and the rich sweetness of the brown sugar also go very well together. The confectionery made after thorough pursuit, even cultivation of the ingredients, must be delicious.
