Mukou-Yama
Japanese notation "夢香山"
Morihachi, a long-established confectioner in Kanazawa City, Ishikawa Prefecture, was founded in 1625 and has a long history of serving the Kaga Domain. Their representative confections include “Chitose” and I remember being impressed by the high quality of their confections.
“Mukou-yama” is also one of their representative confection and is a pancake filled with red bean jam.
Morihachi’s family crest is stamped on the dorayaki crust.
It looks like an authentic dorayaki, and the filled red bean paste is large. The brand “Noto Dainagon” azuki beans produced in Ishikawa Prefecture are used, and their style of making the confectionary used local ingredients is indeed typical of Kanazawa, which is well-known as one of the three major confectionery in Japan.
It is simply delicious, perfectly balanced and of high quality. That never deviates from the strength of Kanazawa and Morihachi prove it through their long-established background.
